From July 1, all mobile food vendors must operate under a new statewide license, replacing the patchwork of city and county permits that previously forced businesses to apply separately in every jurisdiction. Officials say the change will make it easier for food trucks to work anywhere in Texas, while existing vendors that apply before the deadline can continue operating until their inspections are completed. Not everyone is convinced, though, with some owners saying the new system arrived with more questions than answers.
